i was wondering if there was ever gonna be an area for recipes. this really isn't a recipe, but the breading i like to use is called fryin magic. they have it at krogers and iga so i'm guessing they have it just about everywhere. i've used for catfish and crappie so it's probably good for everything else. hopefully i can go catch some catfish so i can have some tonight

I'll add one to the list. I use Andy's fish breading, sold at Kroger, Wal-Mart ect.. I mix a bag of the red and a bag of yellow in a zip-loc bag. To me the yellow is to plain but the red is a little spicy but when you mix the two, yum yum. All I do is rinse my fillet off and let the water drip off to where the fillet is just moist and then roll it in the breading and then fry in oil in the skillet. I have 2 or 3 of my friends hooked on this stuff now.

I'll have to try yours to fire831. I've used that before and kind of liked it, but have never mixed the two together. Sure sounds mighty taste tempting !

Fryin' Magic, a great coating for fish which was initially created to bake poultry and meat and still give it that fried flavor without all the grease...it's made in Warsaw, Indiana.
I love the stuff and swear by it for all my fish.

i got home last night and filleted my catfish and fried them up. i used fryin magic, i cooked some fried potatoes in bacon grease with some onions and red pepper, and i had pork and beans. add a few nice cold beers and i had a great dinner.

I also recommend Drakes. It is more of a batter than a breading. Similar to Long John Silvers. I haven't used it in a few years as I try to come up with my own ideas. I love to cook! I would say I am a barbecueing aficianado.

Your dinner sure sounds good but it spells disaster for me. That is usually my dinner about 3-4 hours before I go ice fishing. I end up farting my buddy right out of the shanty !

I used to swear by andys all the time but it is salty and as we get older its bad for our hearts lol those of us that got fat lol.
I now make my own.
I take yellow corm meal and an equal amount of flower,mix it together in a gallon size zip lock bag add some paprika for making it crispy and some lemon pepper seasoning if you want to add a tangy taste rinse you filet throw them in the bag seal it and shake.
throw them babys in the canola oil and bam awesome fish.

This is my first day to use this site so hope I am doing it correctly. I used to dip my fish in cornmeal and immediately put it into the hot grease, I found that if I rinse fillets under cold running water, shake off excess water, season, and coat on both sides with cornmeal or (your favorite breading)and let it set a few minutes it will stick to the fish and not so much breading will fall off into my grease, also it seems to expand the cornmeal and make the breading thicker.

I use saltene crackers crumbled up as small as I can with my hands. Its good on eyes and great on gills.

Just a tip on crushing saltines. Put them in a sturdy, wide, flat-bottomed bowl. Stoneware works well. Then, take a cylindrical porcelain coffee cup by the handle and use it like a rolling pin to crush the crackers. Apply a downward pressure as you "roll" the cup in increments around the bowl's perimeter. You can pulverize the saltines very thoroughly and quickly this way.
My gal and I use pulverized saltines to make a baked, garlic and parmesan, crusted chicken dish. They help make the recipe delicious. pf

After reading through this thread I just couldn't take it any longer! My stomach was grumbling! I broke out about 2 pounds of gill fillets from the freezer and fried up some potatoes and onion to go with it, some cornbread, and a couple slices of breaded zuchini. Yep, fryin magic has been my favorite breading for years too. Today i made some with frying magic and a handful with crushed saltines. Ummmm. Couple of Corona to wash it down.

Make your Own breading by taking 3/4 flour add 1/2 of corn meal then add 1 teaspoon of Lowery Season salt. Perfect breading every time!!! cp

I've used many different combinations even smashed up bbq potato chips and liked that!--but i think you can tell a difference with the oil you use i prefer peanut oil myself

I have been using the saltine cracker thing for years. You guys have got to try this. This is what I have come up with after years of refinement:
1 package of saltines
1 package of butter crackers (like Townhouse)
1/2 cup flour
3 large eggs
3 table spoons water or milk
Crush crackers in BLENDER works very well.
In blender mix dry goods until ground to your liking. (Some like course, some like fine)
Pat fillets dry then
Season 2lbs of fillets to taste and dip in egg/water (or milk) mixture then into dry mix.
fry in OLIVE OIL for heart healthy fried fish.
For thicker breading dip fillets in dry mix before egg wash and then back into dry goods.
