Drum Stew

Fresh cleaned drum
Unpeeled red potatoes
1/2 lb. skinned salt pork (cut in cubes)
1 med. size onion (peeled and chopped fine)

Boil drum until tender. In separate pot boil potatoes until tender. (Remove all dark meat from cooked drum and feed the cat.) In skillet, fry cubed salt pork until crispy like bacon.
(1) Mince fish, potatoes and raw onion.

(2) Spoon cooked salt pork and grease over above ingredients. Serve hot.

Amount vary depending on number of people being served (about 1 potato every 1/2 pound of fish).

Oven Perch Recipe

Ingredients:
1 egg slightly beaten
1 tablespoon lemon juice
1/2 teaspoon salt
1 dash pepper
3/4 cup crushed corn flake crumbs
1 pound perch fillets


Directions:

Preheat oven to 375 degrees. In a shallow bowl combine egg, lemon juice, salt and pepper. Mix well. Dip fish in egg mixture and then in crumbs.

Place in a shallow greased baking pan. Bake uncovered 20 to 25 minutes or until fish flakes easily and coating is brown.

Baked Perch in Cheese Sauce
Ingredients

• 1 1/2 lb. Perch fillets, 3/4-inch thick
• 3 Tbsp. butter
• 3 Tbsp. flour
•1 tsp. salt
• 1/2 tsp. dry mustard
• 1/4 tsp. dried dill weed
• dash of cayenne
• 1 1/2 c. half and half
• 1 1/2 c. shredded Cheddar cheese
• 4 oz. small salad shrimp

Cut perch into serving pieces; arrange in single layer in greased 2 quart baking dish. In saucepan, melt butter; stir in flour and cook until bubbly. Add salt, mustard, dill and cayenne. Remove from heat and gradually stir in half and half. Return to heat, stirring until thick. Mix in 1 cup of cheese and shrimp. Pour sauce over the perch; sprinkle remaining cheese. Bake at 400 degrees F for about 20 minutes.

Baked Parmesan Perch Recipe

Ingredients:
2 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
1 tablespoon paprika
1 teaspoon dried basil
1 pound perch or fish fillets of your choice
1 tablespoon butter or margarine, melted



Directions:

In shallow bowl, combine the bread crumbs, Parmesan cheese, paprika, and basil.
Brush fish fillets with butter, then dip into the crumb mixture. Place in a greased baking
 pan. Bake, uncovered, at 500 F for 10 minutes or until fish slakes easily with a fork.

Perch Casserole Recipe
Ingredients

• 2 pounds boneless perch fillet
• 2 cans condensed cream of celery soup
• 3 cups milk
• 10 small potatoes peeled and halved
• 7 tablespoons diced ham
• 5 tablespoons diced onion
• 6 slices American Cheese
• 4 tablespoons grated mozzarella cheese

Coat inside of two-quart casserole dish lightly with oil then lay in perch fillets.
 Place potatoes along the sides. In a saucepan heat and mix soup, milk, onions
 and ham, then pour over perch fillets and potatoes. Sprinkle on the grated cheese
 and bake in a 200 F oven for three hours. Lay cheese slices on top and heat until
melted.

Popcorn Perch Recipe

Ingredients:
1 bag (3.5 ounce size) microwave popcorn (can use butter-flavored)
1/2 cup flour
2 eggs
8 perch fillets
Lemon wedges



Directions:

Pop a bag of popcorn in the microwave. Pour into large bowl and shake so all the unpopped kernels go to the bottom.
 When cooled down, transfer to your food processor by hand, checking for seeds.
Process until popcorn looks like big crumbs.

Place flour in one dish, beaten eggs in another and popcorn crumbs in a third (should use loaf pans - they're the perfect size for perch).

Heat about 1/4" of vegetable or canola oil in a large, deep skillet. Dredge perch fillets first in flour to dry them off, then
in egg and finally, in the popcorn. Carefully place in hot oil and fry until golden
brown, turning once. (The fish will brown but the popcorn stays white!). Don't crowd the pan - do in several batches.

Transfer cooked fillets to a paper-towel-lined pan, sprinkle with salt and keep warm in oven until all are done.
