Tasty Baked Crappie



First you pre-heat the oven at 350 degrees.
Next take a casserole dish and carpet the bottom with sliced onions
Then drop in 2 Tbs. of butter/ margarine
Next add garlic salt, onion salt, seasoned salt to your taste
Put the dish in the oven and let it melt down and simmer until you have a sauté
Next you put the crappie in and season it with the same spices to taste, adding 2 Tsp.
of butter on top to melt down over the crappie
Cook until brown on top
Flip the filets over and spice again the same as you did on the other side (except the
butter)
Bake it some more until it is browned and fish is cooked well.

Ahhh Crappie


 Fillet your catch the way you like them
Take equal parts of yellow corn meal and PARMESIAN CHEESE!
Add a Tablespoon of Dill Weed (freeze-dried or fresh)
Salt and Pepper to taste
Mix the above according to how much you'll need to cover your fillets.
Heat your frying oil to at least 375 degrees, drop those bad boys in, and
let'em fry till brown. Take'em out and squeeze some fresh lemon on them!

Your tongue will slap your face!!

Crispy Dill Baked Crappie



Cover bottom of greased baking dish with boneless crappie filets
Coat tops of filets with Miracle Whip Salad Dressing
Sprinkle dill weed over filets
Melt 4 Tbs. of butter or margarine in a medium sized bowl inside the microwave oven
Add 1/2 cup or more of crushed club crackers to butter and mix until moist but crumbly
Sprinkle cracker mixture over crappie filets
Bake @ 400 degrees for 20-25 minutes
Use broiler for last 2-3 minutes to brown tops of filet

Catchy Crappie

 8 - 10 crappie fillets
1 cup plain yogurt (ice cold)
1 cup all-purpose flour
1 cup Italian bread crumbs
1 tbs. old bay seasoning
1/2 tsp. Creole seasoning
1/2 tsp. dried basil
1/2 tsp. dried thyme
1/2 tsp. garlic powder
1/2 tsp. oregano
1/8 tsp. black pepper
1/8 tsp. cayenne pepper
Pam cooking spray

 

Preheat oven to 400 degree.
Coat baking sheet with Pam spray.
Place yogurt in bowl (buttermilk also can be substituted).
Toss all breading ingredients in a plastic bag and mix well.
Dip fillets in yogurt and then in dry mixture.
Coat each fillet and place on the baking sheet.
Spray the tops of all fillets on baking sheet with Pam and bake 15 to 20 minutes on center rack.

Seasoned Baked Crappie



 Place crappie on cookie sheet

 Put on a little melted butter

 Shake on Cavender's Greek seasoning

 Put on some shredded mozzarella

 Bake on 350 for about 15-20 min

Filet crappies and /or blue gills

Melt 1/4 stick of butter/margarine in 9x13 glass baking dish

Spread melted butter/margarine on both sides of filets

Liberally sprinkle Mrs. Dash lemon/pepper no salt seasoning

Bake in 350-degree oven 15-20 minutes

Serve with potatoes fried with onions in bacon grease in an iron skillet

JUM JUM Crappie Recipe

(you will need to purchase box of ZATARAIN'S SEASONED FISH-FRI MIX - CRISPY SOUTHERN  obtained at Wal-Mart's or any
grocery store)
 
   Fillet crappie as regular - cutting in half long ways into finger size width (unless your crappie too small!)

   Mix 1 can of beer with 2 heaping  regular mustard
   Marinade fillets approx. 1/2 hour in mustard&beer
    In plastic bag put some of the Fish-Fri meal - take a few pieces of the crappie from beer/mustard (shake off excess liquid) and shake in mix
    Deep fry until golden brown @350
    After removing from grease immediately sprinkl LIGHTLY w/salt to remove excess grease.

Crappie Casserole Recipe

Take 10 to 12 large crappie fillets.
Place in a large casserole dish.
Cover with Caesar's salad dressing.
Place in oven uncovered.
Cook approx. 35 minutes or until almost done.
Remove and cover with approx. half inch of cheddar cheese.
Then take a medium sized bag of Ruffles potato chips (crumbled up) and place on top of cheese.
Return to oven for 8 more minutes.
Remove, slice and serve.

Deep Fried Crappies

Finely crushed saltine crackers
Flour
Eggs
Milk
Salt
Pepper
Lemon pepper


Beat eggs and milk together like you were going to make scrambled eggs
Mix flour, salt, pepper, and lemon pepper together (to taste) I like lots of lemon pepper
Put your crappie filets in flour than eggs than crackers (the finer the crackers the better)
Deep fry
Salt as fish come out of pan to taste

Stir fry crappie

1 c. diced green peppers
3/4 c. diced green onions
1 c. sliced (fresh) mushrooms
8 oz. chopped crappie filets
1 tbsp. vegetable oil or diet butter
1/2 tsp. seafood seasoning salt (skip this ingredient if on low salt diet)

Combine all ingredients and saute in iron skillet or wok until
crappie is tender. May be served over rice or alone.

Peanut Crappie Recipe



8 small crappie fillets (best when 10 to 12 inches long)

2C. Nut flavored liqueur

8 tsp. peanut butter

4C. Finely ground peanuts

Salt and pepper to taste

4 C. peanut oil (for frying)

 

Marinate fillets overnight in your favorite nut flavored liqueur; I suggest Frangelica.

Drain from marinade and arrange on a prep surface.

Lightly coat fillets in peanut butter (all over)

Next take finely ground peanuts and sprinkle on the fillets, making sure the peanuts coat the fillets as a crust.

Then fry coated fillets in peanut oil until done or golden brown.

This recipe has been in our family for several generations, but I wanted to reveal it to fellow crappie fishermen; enjoy!

Mustard Crappie Recipe


Clean thoroughly in cold water

 Take fillets and cut into 2-inch square pieces (or bitesize pieces)

 Dip in plain old hot dog mustard.  (Salt and pepper to taste if you feel the need!)

 Roll in cornmeal, bread crumbs or saltine crumbs

 Deep fry until golden brown at 350 degrees (don't overcook)

  eadcrumbs and cover completely shaking off any extra bread crumbs. In a skillet
add oil and heat. You want the oil hot. To make sure it hot enough put a little bread crumb in if it bubbles around it it’s hot
 enough. Put fillets in and cook until golden brown.

This will normally feed 3 to 4 people. You can increase ingredients for more fillets.

breaded crappies

Ingredients:

 12 Crappie fillets
 2C. flour
 2C. Seasoned Bread crumbs
 1 egg
 Â½ C milk
 1tsp. Garlic salt
 1tsp. Black pepper
 1tsp sweet paprika
 2C vegetable oil
Directions:

Put bread crumbs on a plate. On a separate plate put the flour. Add Garlic salt, Pepper, and paprika to the flour and mix
 together. In a bowl put milk and egg together and mix well. Rinse and dry fillets with paper towels. Take fillets and cover
 them completely with the flour mixture. Shake off any extra flour from the fillets. Put floured fillets in egg wash covering
 the whole fillet. Then put them in the breadcrumbs and cover completely shaking off any extra bread crumbs. In a skillet
add oil and heat. You want the oil hot. To make sure it hot enough put a little bread crumb in if it bubbles around it it’s hot
 enough. Put fillets in and cook until golden brown.

 The secret is to really dry the fillets. I spread them on a paper towels and pat dry. When the fillets are dry I salt them lightly

Baked Stuffed Crappie


This recipe is for five filets, enough for two servings. Adjust recipe according to amount of filets to be baked.
 In a 9" baking dish, place a layer of thinly sliced onions (preferably 10/15 onions)
Place in microwave on high for 3 minutes
Thoroughly rinse and pat dry the filets
Layer them over the onions
Empty a can of cream of celery soup, 1/2 can of milk and 1/2 package of seasoning that accompanied the dressing into a blender
Blend thoroughly
Combine the liquid with half of package of stovetop dressing (chicken flavored) in a separate container
Spread this mixture over the layered fish
Place in a 350-degree oven for 15 min. covered, and then 10 min. uncovered
Fish is cooked when it flakes with a fork

Foil-Baked Crappie


Ingredients:

2 pounds crappie fillets
3 tsp lemon juice
3 tb butter
1/2 tsp basil
1/2 tsp dill
Salt and pepper
Instructions:

Rub fillets with butter and place on aluminum foil. Sprinkle lemon juice, basil, and dill onto
fillets and add salt and pepper per your preference. Fold foil over fillets and tightly seal
edges to enclose fillets in a "foil pocket". Bake or grill for approximately
15 minutes or until fillets are white and flaky.

Zatarain's


Zatarain's Seasoned Fish-Fri
French's yellow mustard
Buttermilk
Lea&Perrins Worcestershire Sauce
Red pepper,black pepper,salt,garlic powder,onion power
Peanut Oil

Remove any excess moisture from filets and season to your taste with dry seasonings.
 use salt sparingly because the Zatarains
 contains some salt. Next I apply a few dashes of Lea&Perrins to the filets and coat them
liberally with mustard.
 then pour buttermilk over filets and soak for at least 15 minutes.

To fry roll or shake filets in Zatarains Fish-Fri and drop in peanut oil heated to 365 degrees.

Saucy Cheese Crappie

1 Lb. of Crappie Fillets (6 to 8)
1 can cream of mushroom soup
1 cup shredded cheddar cheese
paprika

Spray baking dish with Pam, season fillets and put in baking dish. Put cream of mushroom
 soup over fillets (undiluted)
 top with grated cheese and sprinkle paprika over top Bake at 350 degrees for 20 to 25
 minutes Can be put over noodles or rice or just as a main dish.

Garlic Crappie Recipe



Best and easiest recipe I've ever used!

 Typical egg and milk to dip the fillets in to get the rest of the mixture to stick

 Crush 1 sleeve of Saltine crackers in a large ziplock bag.

 Add 1/8th to 1/4th teaspoon garlic powder and shake. (Not garlic salt as the saltines have plenty)

 Melt butter in frying pan, dip fillets in milk/egg mixture and put in baggie.

 Shake until coated with the cracker/garlic mixture and place in hot frying pan.

  Fry for 5 min. per side or longer if you like crispy critters
